Cardamom and Date Pancakes

Ingredients
Betty Crocker pancake mix +eggs + milk + vegetable oil

Tablespoon cardamom powder

Tablespoon cinnamon

Butter
Maple Syrup
Date Jam

cup soft pitted dates
pinch of sea salt and cinnamon

Directions

Mix the Betty Crocker pancake powder with the cardamom and cinnamon.

Add the milk, eggs and vegetable oil as per the instruction on the packet for the desired quantity.

Mash the bananas in the mixture.

Butter a large non-stick frying pan over medium heat. Spoon 1/4 cup (60ml) of pancake mixture into the pan. Cook for 1 minute or until bubbles appear on the surface and pancakes are golden underneath. Turn and cook for 1 minute or until golden underneath. Transfer to a plate and cover with foil. Repeat with remaining batter greasing pan between each batch.

Place pancakes on serving plates and top with date jam.

Soak dates in warm water for 5 minutes then drain, reserving some water for blending. Add the dates, sea salt, cinnamon and 1 tablespoon of water to a food processor. Pulse until you get the desired consistency, adding more water as you go.
