Date Pancakes
Cardamom and Date Pancakes

Servings: 4 (makes 8 pancakes)
  Betty Crocker pancake mix +eggs + milk + vegetable oil
1/2 Tablespoon cardamom powder
1 Tablespoon cinnamon
1/2 banana
1 Tablespoon  brown sugar
  Maple Syrup
Date Jam
1/2 cup soft pitted dates
  pinch of sea salt and cinnamon
2 Tablespoons water
  • 1 Mix the Betty Crocker pancake powder with the cardamom and cinnamon.
  • 2 Add the milk, eggs and vegetable oil as per the instruction on the packet for the desired quantity.
  • 3 Mash the bananas in the mixture.
  • 4 Butter a large non-stick frying pan over medium heat. Spoon 1/4 cup (60ml) of pancake mixture into the pan. Cook for 1 minute or until bubbles appear on the surface and pancakes are golden underneath. Turn and cook for 1 minute or until golden underneath. Transfer to a plate and cover with foil. Repeat with remaining batter greasing pan between each batch.
  • 5 Place pancakes on serving plates and top with date jam.
  • 6 Soak dates in warm water for 5 minutes then drain, reserving some water for blending. Add the dates, sea salt, cinnamon and 1 tablespoon of water to a food processor. Pulse until you get the desired consistency, adding more water as you go.
