This classic coffee and walnut cake will keep you up at night and making a few trips during the night for a tasty midnight snack.

Ingredients

Cake

  • 1 Box Betty Crocker™ Devil's Food Cake Mix
  • 250 ml water
  • 90 ml vegetable oil (6 tbsp)
  • 3 medium free range eggs
  • 100 g walnut pieces, chopped (leave some whole walnuts to decorate the top of the cake)

Filling and Topping

  • 1 tub Betty Crocker™ Vanilla Buttercream Style Icing
  • 2 tbsp instant coffee granules dissolved in 2 tbsp hot water

Preheat your oven to 180°C (160°C for fan assisted ovens) / Gas Mark 4.

Mix the cake mix, oil, water, eggs and water gently together and whisk (by hand or electric mixer) for 2-3 minutes until smooth and creamy. Stir in the walnut pieces.

Pour the mixture evenly into the prepared cake tins.

Bake in the centre of the oven for 23-28 minutes or until a rounded knife inserted into the centre of the cake comes out clean, then cool on your cooling rack.

Whisk by hand or electric mixer) the icing with the dissolved coffee and sandwich the sponges together with half of it. Use the rest to spread on top of the cake. Add the remainder of the walnut pieces for that fabulous finish!

For something extra special, decorate with caramelised walnuts.
