
Dibyaza Pancake

Ingredients
- 1 box Betty Crocker™ Pancake, Crepe, Waffle Mix
- 1 2/3rd (414ml) cups of water
- 2 cups mixed dried fruits (apricots, figs, raisins, prunes, walnuts, pine, dates)
- 1 teaspoon ground cinnamon
For the caramel
- 2 tablespoons of butter or ghee
- 1 cup sugar
- 2 cups of water
- Honey
Topping
- Honey if necessary
Preparation
- Add water to the Pancake, Crepe & Waffle Mix and mix
- In a separate pan, blanch and peel the almonds, then lightly toast them along with the pistachios and walnuts in a dry pan until fragrant.
- Chop large dried fruits like apricots and figs into small pieces.
- In a deep pan, melt 1 cup sugar over medium heat until it turns golden brown.
- Add 2 tbsp of butter or ghee, stirring well.
- Slowly add 2 cups of water to the caramelized sugar (be careful, as it may splatter). Stir in dried fruits and let them simmer for 10–15 minutes until they soften.
- Heat a pan over medium heat and pour the pancake mix. Make multiple and sit them a side
- Pour the Dibyaza mixture on top of the pancake stack.
- Drizzle with honey if desired.
- Cut the stack to reveal the fluffy pancakes and rich filling inside.
