Festive Brownies

These quick and easy colorful brownies will light up any festive occasion!


Ingredients

  • Small check mark in a circle icon 110ml vegetable oil, plus extra for greasing
  • Small check mark in a circle icon 1 box Betty Crocker™ Chocolate Fudge Brownie Mix
  • Small check mark in a circle icon 2 eggs
  • Small check mark in a circle icon 45ml (3 tablespoons) water
For the decoration
  • Small check mark in a circle icon 250g Betty Crocker™ Vanilla Frosting
  • Small check mark in a circle icon 30g Betty Crocker™ Chocolate Frosting
  • Small check mark in a circle icon 45g brightly colored sugar-coated chocolate beans (see Tips)

Preparation

  1. Preheat the oven to 180°C/350°F. Grease a 23cm square shallow cake pan and line the base and sides with baking paper.
  2. Make up the brownie mix as directed on the box with the oil, eggs and water. Spread the mixture evenly in the prepared tin.
  3. Bake for 35-40 minutes or until a toothpick inserted 5cm from the edge of the pan comes out almost clean. Leave in the pan for 15 minutes, then lift out of the pan using the lining paper and transfer to a cooling rack to cool completely (about 45 minutes).
  4. Remove the lining paper from the brownie slab and place upside down on a board (see Tips). Use a small palette knife to spread the vanilla frosting evenly over the top.
  5. Spoon the chocolate frosting into a small paper or disposable piping bag fitted with a fine writing tip or nozzle (or just snip off the end of the piping bag to create a small hole). Pipe a continuous swirly line to resemble fairy lights wire. Add the sugar-coated chocolate beans at intervals along the ‘wire’ to resemble fairy lights. Cut into 16 squares.

Betty's Tips

  • Flipping the cold brownie slab over to decorate will ensure that you have a smooth, crumb-free surface for the frosting.
  • You can use any small colorful sweets for the fairy lights, such as mini jelly beans.
  • Store the brownies in an airtight container in a cool place for 3-4 days.
