Chocolate Covered Brownies Bites

Ingredients
- 1 box Betty Crocker™ Chocolate Fudge Brownie Mix
- 2 x 200g Betty Crocker™ Semi-Sweet Chocolate Chips
- 3 tbsp water
- 1/3 cup + 2 tbsp oil
- 3 eggs
- 2 tbsp chopped pistachios
- 2 tbsp dried rose petals
- 2 tbsp desiccated coconut, toasted
Preparation
- Preheat the oven to 180°C and line a XX pan with baking parchment.
- In a large bowl, whisk together the fudge brownie mix, water, oil, and eggs until well combined. Pour the mixture into the prepared pan and bake for 22-25 minutes, or until a skewer inserted comes out clean.
- Remove from the oven and allow the brownies to cool completely in the tin.
- Once cooled, remove the brownies from the pan and slice them into 12 equal pieces.
- Place a cooling rack over a piece of parchment paper.
- In a heatproof bowl, pour the chocolate chips and place it over a pan of barely simmering water, ensuring that the bottom of the bowl does not touch the water's surface. Melt the chocolate, stirring every 2 minutes, until glossy and completely melted.
- Dip each brownie into the melted chocolate one at a time, using a slotted spoon or fork. Place the chocolate-covered brownies onto the prepared cooling rack.
- Divide the chopped pistachios among 4 brownie bites, the dried rose petals among 4, and the toasted coconut among the remaining 4.
- Allow the chocolate to set for at least 1 hour before serving.
