Fig and Berry Waffles

Ingredients

  • Small check mark in a circle icon 1 box Betty Crocker™ Pancake, Crepe & Waffle Mix
  • Small check mark in a circle icon ¼ cup caster sugar
  • Small check mark in a circle icon 1 tbsp cinnamon
  • Small check mark in a circle icon 1 ¼ cup water
  • Small check mark in a circle icon Cooking spray
  • Small check mark in a circle icon 1 cup Greek yogurt
  • Small check mark in a circle icon 4 figs, quartered
  • Small check mark in a circle icon ½ cup blackberries
  • Small check mark in a circle icon Pomegranate seeds, to serve
  • Small check mark in a circle icon Mint sprigs, to serve
  • Small check mark in a circle icon Maple syrup, to serve
  • Small check mark in a circle icon 4-inch round waffle iron

Preparation

  1. In a large bowl, whisk together the pancake mix, sugar, and cinnamon. Pour in the water and whisk until smooth.
  2. Heat a waffle iron according to the manufacturer's instructions. Once hot, add around 1⁄4 cup of waffle mix and close. Cook for 3-4 minutes before removing with a palette knife. Repeat until all of the mixture is used.
  3. To serve, place 3-4 waffles per person on serving plates. Divide the Greek yogurt, figs, blackberries, and pomegranate seeds between the plates. Scatter with mint leaves and drizzle with maple syrup before serving.
