Fig and Berry Waffles

Enjoy a delightful blend of figs, berries, and the perfect pancake mix, elevated with Greek yogurt and a touch of maple syrup.
Ingredients
- 1 box Betty Crocker™ Pancake, Crepe & Waffle Mix
- ¼ cup caster sugar
- 1 tbsp cinnamon
- 1 ¼ cup water
- Cooking spray
- 1 cup Greek yogurt
- 4 figs, quartered
- ½ cup blackberries
- Pomegranate seeds, to serve
- Mint sprigs, to serve
- Maple syrup, to serve
- 4-inch round waffle iron
Preparation
- In a large bowl, whisk together the pancake mix, sugar, and cinnamon. Pour in the water and whisk until smooth.
- Heat a waffle iron according to the manufacturer's instructions. Once hot, add around 1⁄4 cup of waffle mix and close. Cook for 3-4 minutes before removing with a palette knife. Repeat until all of the mixture is used.
- To serve, place 3-4 waffles per person on serving plates. Divide the Greek yogurt, figs, blackberries, and pomegranate seeds between the plates. Scatter with mint leaves and drizzle with maple syrup before serving.
