Luqaimat with Chocolate Chip Drizzle

Ingredients

  • Small check mark in a circle icon 200 g Betty Crocker™ Semi-Sweet Chocolate Chips, melted
  • Small check mark in a circle icon Pinch of saffron
  • Small check mark in a circle icon 1 tbsp instant dried yeast
  • Small check mark in a circle icon 1.5 cups lukewarm water
  • Small check mark in a circle icon 3 cups buttermilk pancake mix
  • Small check mark in a circle icon ½ tsp cardamom powder
  • Small check mark in a circle icon ¼ cup caster sugar
  • Small check mark in a circle icon 2 liters vegetable oil

Preparation

  1. Put the saffron and yeast into a small bowl and pour over the water. Whisk, then allow to sit for 5 minutes until the surface begins to bubble, and the yeast is activated.
  2. In a large bowl, combine the pancake mix, cardamom powder, and sugar. Whisk to combine. Pour in the yeast water and stir with a wooden spoon until a dough forms. Cover with cling film and leave to rise in a warm place for one hour.
  3. Pour the vegetable oil into a large heavy-bottomed pot over medium heat or add it to a deep fryer. Allow it to heat for around 15 minutes or until it reaches 190°C.
  4. Dip a tablespoon in a little oil and scoop 1 tbsp of the mixture at a time.
  5. In batches, being cautious not to overcrowd the pan, carefully lower into the oil using a slotted spoon and cook for 1-2 minutes, using the spoon to gently turn the luqaimat so that they are evenly colored.
  6. Tip onto a baking tray lined with kitchen paper to drain until all luqaimat have finished cooking.
  7. Stack on a serving dish and drizzle with melted chocolate before serving.
