Delicious dessert fritters that are crunchy on the outside and irresistibly soft and sweet and on the inside.
- Pancake Mix Buttermilk
- ¾ cup water
- 3 tbsp (50g) butter
- 2 eggs
- 1 tsp vanilla extract
- In a pot, bring butter and water to a boil and melt the butter. Add the Betty Crocker pancake mix and stir with a wooden spoon until the batter comes together and is thoroughly mixed. Leave to cool, then pour into stand mixer and add the eggs one at a time, then finally the vanilla.
- Pour the batter into a piping bag fitted with a star tip. Heat up a good quantity of oil and pipe in portions of the batter (the length is optional). Turn the pieces on a medium heat until golden brown.
- Dip into prepared syrup, then decorate with pistachios.
- For the syrup (sheera): In a pot, bring the water and sugar to a boil. Once it starts to boil, add the rest of the ingredients and leave to thicken on low heat for 20 minutes.
